This product does not contain any trans fats.Nuclease is a 5`-phosphodiesterase developed by our company in response to the enzymatic production of high (I+G) yeast extract and the characteristics of the production process of 5'-nucleotide. It is extracted and freeze-dried from Penicillium citrinum culture solution. It is a kind of enzyme preparation that can directionally hydrolyze nucleic acid into 5'-nucleotide. 5,-Nucleotide has a strong freshness-enhancing effect, and is a very valuable food freshness enhancer. When nucleotides and amino acids are used in combination, they will produce an umami taste that cannot be achieved by a single umami agent. It also doubles the umami taste, that is, a synergistic effect. It has the functions of highlighting the main flavor, improving the flavor, and inhibiting the peculiar smell when used in food. At the same time, the nucleotide has a synergistic effect on the sweetness and meat taste, and it has a synergistic effect on the saltiness, sourness and bitterness. , Fishy smell and burnt smell have the effect of eliminating and killing. Therefore, nuclease plays an extremely important role in the industrial production of nucleotides and the production of flavored foods such as yeast extracts.
